Literally, "beautiful country", Bel Paese got it's name from the name of a book by the cheesemaker's friend. Similar to St. Paulin and even Mozarella, it's a creamy cheese made of cow's milk, mild and buttery. Typically used to top pizzas and hot panini and focaccia sandwiches, it has a very even melting which makes it perfect for hot dishes.
