Recently, VBC completed construction on an ambitious new production facility for Loire Valley-style cheeses. Bijou is the French word for "jewel", and these petit, glistening cheeses are the perfect embodiment. Styled after the classic Crottin de Chavignol, each Bijou weighs in at around 2 to 3 ounces. They are semi-firm in texture, and bear the typical, subtle tang of fresh goat's milk cheese.

THIS YUMMY SWISS CHEESE has a delightfully nutty flavour, and a fine texture that keeps better in the refrigerator than cheddar. (Cheddar heese seems to harden fadster in the refrigerator than Swiss cheese). I compared it to the "gourmet" Swiss cheese at my local supermarket. The supermarket's cheese is less firm, and seems to have far more of a fat content. Yes...the supermarket's cheese is a bit smoother, richer, and more buttery...but when one thinks of the probable extra calories, this Wisconsin Cheesema Swiss cheese is quite adequate...if not even more so.
